Tajinaste – Listán Blanco (DO Valle de la Orotava)
Info: Everything is special and interesting on this wine: spectacularly beautiful area in the Canary Islands, with a unique vine training with the ancient way of “cordon trenzado” to protect the vines from the intense wind. The grape is actually Palomino, the same as the one used in Sherry.
Tasting notes: Tropical fruits (guava, mango), herbal (tarragon), hints of toasted almonds, and a smoky and mineral finish caused by the volcanic soil.
Pairing: White fish (cod, hake), poultry and young soft cheeses.
